According to the legend, an Ottoman pasha invited a few hostile noblemen for a feast. When they tried to leave, he said “the feketeleves is yet to come“, meaning they will be served coffee, then taken captives. Since then, it became a lasting symbol for “the worst part is just about to happen”. However, for us coffee lovers it is the very opposite: the highlight of the day. As soon as we smell the fresh beans, we know: “the best is yet to come!”

Coffee has always been an eternal symbol of the struggle between bitterness and sweetness. Neither one is the point. The contrast between them is.

Our identity is built on that same duality, and once you start looking, it turns up everywhere. In the background: darkness, chaos, sorrow. In the foreground: light, clarity, joy. It is in the packaging, black and white with nothing in between. It is in the name itself, a word that once meant imminent dread, turned into a word that means upcoming happiness.

It is in how the products are made, too: the discipline of pharmaceutical safety, put to work on something as ordinary as a morning cup. Rigour is not the opposite of pleasure. It is what stops pleasure depending on luck.

Our philosophy is simple. Even when life tastes bitter, your coffee ritual can always bring the sweetness back. With every brew, we want to remind you that something extraordinary can emerge from the ordinary.

Nature and science are not opposites. Science is what paying close enough attention to nature eventually turns into.

Nature is an artist and coffee is its masterpiece. Specialty coffee is closer to fine wine than most people expect. In a good cup you can taste the soil, the altitude, the weather that year, the varietal. A single origin tastes of a specific hillside in a specific season, and it carries the mark of the hands that picked it, the process that fermented it, the roaster who charmed the character out of it, and the brewer repeating the same small craft every morning. An improbable collaboration between nature and mankind, and more than enough reason to get out of bed.

And then it meets your tap water, which is the last variable in the chain and the only one nobody thinks about. Appearing to be a small thing, yet carrying a big impact. Everything nature, the farmer and the roaster put into the bean has to pass through the water to reach the cup. Get the minerals wrong and you erase a year of honest work in a few seconds. Get them right and every treasure hiding in the bean is revealed. We are not adding flavour. We are removing the thing that was concealing it.

We all have our story of when we first encountered specialty coffee, and it was love at first sight. The realization that coffee can actually have a taste, and that it can be pleasant, is truly life-changing. Going to a café started to feel like a celebration. After a while, our little hobby started to overtake a bigger and bigger part of our kitchen. And sooner or later, we all fell upon the same discovery: water has an impact! A finding after which we’ll never see things the same way. Whatever equipment we use, however careful our workflow is, there will always be a final judge deciding whether harmony or chaos lands in our cup.

What follows is a deep rabbit hole: home barista recipes, commercial products, TDS, hardness, alkalinity, roast profiles, etc. It is simultaneously fascinating and frightening to discover this parallel universe, and how much it takes to prepare the perfect cup of coffee. For us, this is where it stopped being a hobby.

Our Bachelor’s degree is in environmental sciences, where we learned early that the quality of water affects everything. After that came a Master’s in biotechnology, followed by a six-year career in pharmaceutical safety and regulatory affairs. So not only did we learn to appreciate what is natural and how to preserve it, we also learned how to set up production properly: specifications, batches, traceability, consistency that does not depend on luck.

One more habit came across from that career. In pharmaceutical safety you do not get to say things you cannot prove, and that stuck. Water is a category full of confident claims and thin proof. We would rather tell you what has been measured, what has been specified, and what we do not yet know, than sound more certain than we are.

Our recipes came after trying what else was available and deciding we could do better and make it more practical. Scientifically and empirically more reasonable, yet easy to use and understand even for beginners. It was up to us to create products we ourselves would like to use.

Coffee carries its duality in so many layers that in the end there was only one name this could have had. And with Feketeleves, the best is truly yet to come.
